The square only half empties.
When the day-trippers leave, Krakow settles into its better half: a Chopin recital by candlelight in a Baroque hall, the Cloth Hall glowing amber across the Rynek, a late cruise with the castle sliding past. The cellars under the Old Town have poured vodka since the Middle Ages, and they still do.
Pierogi first, everything after.
Krakow eats like the borderland it is: dumplings pinched by hand, oscypek cheese grilled on the Rynek, zapiekanka at midnight in Kazimierz. A tasting guide gets you to the milk-bar counters no menu translates.
The vodka comes cold and neat.
Poland does not mix it, and neither should you: a flight of clear, honey and quince pours in a vaulted cellar, chased with pickles and rye bread. A guided tasting sorts the tourist traps from the bars locals actually drink in.

The mountains keep their own hours.
Zakopane is Poland at altitude: timber churches, sheep’s-cheese smoke, a cable car to the ridgeline where Slovakia starts. Most day trips fold in a thermal-bath soak and a highlander lunch, so the drive back is the only hard part. Krakow’s favourite escape, and an easy one.
